S&S Meats: Makes the Scotch More Than A Steakhouse.

S&S Meats has a large selection of excellent quality steaks to choose from.
Hand-trimmed and specially aged, Sterling Silver Certified Premium USDA Choice meats distinguish Scotch & Sirloin from other steakhouses. Scotch owners Lindy Andeel and Doug Farha entered a partnership with long-time Wichita butcher Bill Buetow in 1998 to maintain the tradition of high quality meat. The result was the privately owned, open-to-the-public S&S Meats, located on Scotch & Sirloin’s parking lot.

S&S Meats is the only private meat market in Kansas that receives special aged meat from Sterling Silver. Special time and care is put into aging and trimming the meat to perfection for either serving at the restaurant or stocking it in the meat cases to be sold to the public. Only the top 12% of all beef is qualified to be butchered for Sterling Silver Premium Meats. Once the beef reaches S&S Meats, it is aged for another 4-6 weeks; this tenderizes and adds flavors to the meat. According to the Sterling Silver website, “Aging beef is the process by which it is stored under controlled conditions at optimal temperatures. This allows the natural enzymes in the beef to break down, which leads to enhanced flavor and maximum tenderness.” This, along with the outstanding marbling gives it the supreme flavor that one tastes.
S&S Meats is the source for a variety of Sterling Silver Certified Premium products served at Scotch & Sirloin. They merchandise five types of local sausages and Sterling Silver Certified Premium beef, pork, lamb, and veal. The superiority of S&S Meats in comparison to any other meat market in Kansas tops all other private meat markets. The Sterling Silver beef sold is of highest quality and is the only beef sold at S&S Meats.
S&S Meats became quite popular after being open for only five years, this called for an expansion in 2003. During the holidays, S&S is just as renowned, averaging 1,000 hams and turkeys in 30 days. That is the same amount sold in three summer months. Today, S&S Meats keeps itself busy with returning, new and interested customers.
