"When you’re dedicated to delivering legendary dining experiences, it makes sense to start with the best."
Sterling Silver accepts only beef from the very top tier of Choice and prime grades with standards that are based on quality not breed. All Sterling Silver Premium Beef is highly marbled for rich flavor and aged to perfection. This Premium Beef has 80 percent more flavor than lower quality beef and ensures that all products are rated modest or higher for marbling (the white flecks of fat within the muscle) in rich authentic beef flavor.
Sterling Silver Premium Beef has always taken pride in the tenderness of its product. The consistently high standards for quality grade, marbling and aging have been in place for years, ensuring every cut is tender, juicy and flavorful every time. So it is no surprise Sterling Silver Beef met criteria for the newly introduced USDA certified very tender without a single change to the process. When you’re dedicated to delivering legendary dining experiences, it makes sense to start with the best.

Scotch and Sirloin starts with the best, then enhance the premier eating experience by following these three crucial steps. The First step is to optimize the tenderness of the beef, this is through the aging process. We age all our beef in house for a minimum of 45 days to guarantee its tenderness. Once the beef is aged our Executive Chef hands cuts all of our Steak daily to certify they are all center cut Premium Steaks. The final step involves the cooking process, here at Scotch & Sirloin we use a state-of-art broiler that will sear the steaks at 1600 degrees. This high temperature searing seals in all the juices, making for an extraordinary steak.
